Pastry chef Aaron Surman started his carrier as a professional at the age of 15 with a 4-year apprenticeship in Brisbane , Australia. After this he moved to Melbourne to work in the countries best patisserie (Le petit gateau) and the best restaurant in the country Vue de monde. After honing his skills for 4 years in Melbourne and working his way to pastry sous at Vue, He returned to his hometown Brisbane and headed the pastry section Of Urbane, Best in the state. Also during this time he attended Eole Valrhona Tokyo, Apon return he teamed up with his Friend and went to design and run the pastry program at Gerard’s and they’re new bar.
Now in Canada Aaron headed the pastry team at L’Abattoir for almost 2 years and now is the executive chef for 49th Parallel and Lucky’s. Here he over sees 2 Kitchens, soon to be 3.
Now 30 years old he plans to stay in Vancouver and help grow the pastry scene.
