Andrea Carlson, chef and owner of Burdock & Co, opened in Vancouver’s Mount Pleasant neighbourhood in 2013. From day one, she has been inspired by British Columbia’s tangle of islands and coastlines, sourcing ingredients from local growers, farmers, and foragers by presenting them in a fluid culinary experience. Her farm-to-table philosophy intrigues and enchants diners. The restaurant has earned a reputation as a leader of naturalist food and drink, featuring a constantly updated organic menu complemented by a careful selection of natural wines, craft beers, and bespoke cocktails.
Born in Ottawa and raised in Toronto, Amanda Cohen attended university in New York City and never left. Amanda is the chef and owner of Dirt Candy, NYC’s genre-redefining vegetable restaurant. Dirt Candy became the first vegetarian restaurant in 17 years to receive two stars from the New York Times, was recognized by the Michelin Guide five years in a row, and has attained awards from Gourmet Magazine, the Village Voice, and many others. Dirt Candy: A Cookbook, is the first novel-cookbook supplemented with graphics to be published in North America, and is currently in its sixth printing. Did we mention she is also a Canadian?
