Chef Wayne Morris
Chef Wayne was raised in Yarmouth County, Nova Scotia where he learned to fish, hunt and raise animals from an early age. He was raised on traditional Acadian/Metis meals prepared by his mother and grandmother, providing him with a rooted appreciation of the dishes’ history. His extensive experience in cooking took him from Halifax to Kelowna, BC where he was chef de cuisine at Waterfront Wines before opening Boralia in Toronto with his wife, Evelyn. Boralia offers modern interpretations of historic recipes of Indigenous peoples and of the British and French settlers and subsequent immigrant groups.
