With a European approach to cuisine, owners Lucais Syme and Gillian Book met as chefs at Vancouver’s long-shuttered Parkside Restaurant before becoming partners in life and in the kitchen. Together, they use the best available ingredients to deliver interesting and satisfying dishes that push the boundaries of modern Northern Italian-inspired cuisine.
Nick Nutting leads the pack at Tofino’s Wolf in the Fog, crowned En Route’s number one best new restaurant in Canada when it opened in 2014. His approach to cooking is simple: honour the ingredients enough to let them speak for themselves. Ontario-born but raised in Victoria, Nicholas comes from a city background that began with a culinary experience in Calgary, Singapore and Montreal, before heading to Tofino as Chef de Cuisine at The Pointe Restaurant at The Wickanninish Inn. Now Nicholas can be found foraging in the forest, fishing the ocean, running along the beach, or heading up the open kitchen in Wolf in the Fog.
