Get a behind-the-scenes glance at the most praised charcuterie producer in Vancouver. Oyama Sausage was founded more than 30 years ago by John & Christine van der Lieck in Oyama, BC, relocating to the Granville Island Public Market in 2001. A fifth-generation charcuterie craftsman, John developed Oyama’s innovative selection using his widespread knowledge of gastronomy and his passion for quality ingredients. He often fuses traditional methods with international inspiration, delighting and surprising the palate, while developing Vancouver’s unique food culture. In this class, participants will develop their own salami recipe and create their own dry-aged salami. It will be an authentic experience in the historic art of charcuterie, existing before refrigerators, vacuum packaging, and supermarkets.
