Fable leads the farm-to-table movement in Vancouver. Born from Chef Trevor Bird’s experience on Season Two of Top Chef Canada and the ‘Restaurant Wars” episode, the Kitsilano neighbourhood staple opened in 2012. With product arriving daily from local farms, the menu is constantly evolving. Fable’s garden and bee hives on the roof top supplement each ingredient showcased within the restaurant’s open and inviting space.
After starting his culinary career at age 14, Dave Mottershall worked his way up as a dishwasher in Port Elgin, Ontario, to Toronto, Banff, and Prince Edward Island, where he was named PEI Chef of the Year (2012) for his work at Terre Rouge Bistro Marche, which featured locally-sourced and sustainable ingredients. Most recently, he opened Loka in downtown Toronto, where he continues to explore Canadian cuisine, with a spotlight on charcuterie made in-house, all with a zero waste policy. Loka has been recognized as best in class by Toronto media, and has acquired a substantial following for their beautiful culinary creations.
