Chef Mandel Hitzer

Mandel Hitzer has been a student of cookery for 20 years.  He opened deer + almond in 2012, which gave him a stage to bring different concepts to Winnipeg food lovers.   Mandel has become a leader and innovator in his community.  He co-created RAW:almond, a 21 day pop up restaurant, that brings Chefs from all over North America to cook on a frozen river.  Last year Conde Nast Traveller mentioned RAW: almond as part of the world’s top pop-up restaurants alongside noma and elBulli.  Earlier this year, he took the pop-up concept to Churchill Manitoba, to cook a menu inspired by ingredients from the land in a 250-year-old fort, under the northern lights.  He has created the environment of his dreams at deer + almond, a life full of friends, laughter and imagination.
